Applesauce Oatmeal Muffins

I've been tinkering with a few recipes lately, trying to find ways to make homemade muffins taste great without using any oil or butter.  These are great, and super easy to boot.  You can adjust the recipe to include raisins or nuts, or whatever floats your boat.

 

Bonus: M loves them for breakfast, so all I need to do is defrost one for 30 seconds, and the chances that I might be able to enjoy a few sips of hot coffee greatly improve while he's busy eating.  It's the little things:

Morning Face Stuffing
Ingredients

2 Cups of quick oats (not instant)
1 Cup of all purpose flour
1 Tsp. baking powder
1 Tsp. baking soda
1/2 Tsp. salt
1 Tsp. cinnamon
2 Cups of unsweetened apple sauce
1/2 Cup brown sugar
2 Eggs
1 Tbsp vanilla extract
 
Directions
  • Preheat oven to 375 Fahrenheit.
  • Mix the dry ingredients.
  • Mix the wet ingredients.
  • Mix it all together.
  • Spoon mixture into muffin tray and bake until muffin tops (!!) are golden brown, about 22 minutes.
Makes approximately 12 regular sized muffins.

Once muffins are cool,  store in an airtight container for up to three days in the fridge.  These also freeze really well, so are super easy for quick on the go snacks.  
I once forgot to add the sugar to this recipe, and M still ate it and liked it.  I wanted to sprinkle cinnamon sugar on top of the butter I smeared on mine but restrained myself.  Lesson learned: with sugar = better!
